Enjoy Sweet Corn Season This Summer with Some Practical Tips

Sweet corn season is in full swing in Iowa, despite the unusual weather events this year. Southeast Iowa saw its first harvest on June 24, with central Iowa following on July 4.

Dan Fillius, a horticulture specialist at Iowa State University Extension and Outreach, provides tips for the best sweet corn experience:

When is sweet corn the best? Sweet corn from roadside stands is usually the freshest, often picked that same morning. Grocery store corn, whether fresh or supersweet varieties, can hold its quality for up to 10 days.

When should I harvest sweet corn? Harvest at the milk stage, when kernels produce a milky juice when punctured. This typically occurs 18 to 23 days after silk emergence.

How to keep your sweet corn fresh? Store ears in the refrigerator to prolong freshness. Warm temperatures degrade the sugar content and taste. Be aware of potential corn earworm damage due to this year's weather.

Peaches and Cream This term refers to bicolor sweet corn, known for its delicious yellow and white kernels. Though not as common, it remains a favorite descriptor for high-quality sweet corn in Iowa.

Morgan McGhee Hired as Iowa State Assistant Swim Coach

Iowa State has named Morgan McGhee as an assistant coach for the swimming program, head coach Matt Leach announced Monday. McGhee, formerly an assistant coach at Long Island and Fordham, brings extensive experience, having led successful teams at both schools.

“We are thrilled to welcome Morgan to our Cyclone family,” Leach said. “Her energy, passion, and drive will help us continue developing our student-athletes as people, students, and athletes.”

McGhee competed for Emmanuel University and served as a graduate assistant at Notre Dame College. She and her husband, Alasdair, are newlyweds and have a cat named Bronx.
