ISU Dining's Chef Josh Wilkins Triumphs at 37th Annual Taste Contest

Ames, IA – The culinary scene in Ames is buzzing with excitement as Josh Wilkins, the talented chef de cuisine at ISU Dining, clinched the top spot at the 37th annual Taste contest hosted by the Iowa Pork Producers. This prestigious event, held on January 22, saw Wilkins emerge victorious among nine accomplished chefs from across Iowa, showcasing his exceptional skills in preparing a mouthwatering boneless pork loin entrée.

A Winning Dish

Wilkins wowed the judges and the public alike with his exquisite pork braciole. This Italian-inspired dish features a succulent pork loin, expertly stuffed with a delectable parmesan spinach filling. The dish is beautifully presented on a bed of creamy parmesan polenta, a cornmeal-based delight that perfectly complements the tender pork. The pork loin is braised to perfection in a rich tomato sauce and finished with a fragrant basil pistou, adding a burst of flavor that secured both the competition’s top prize and the coveted People's Choice award.

Chef Wilkins: A Culinary Journey

A Des Moines native, Wilkins has brought a wealth of experience and culinary expertise to Iowa State University. His culinary journey has taken him to some of the most renowned dining establishments in New York, New Orleans, and St. Paul. Before joining ISU, Wilkins served as a corporate chef for K-12 private schools, honing his skills in creating delicious, nutritious meals for students. His wife, Jules, works at the ISU Foundation, making the couple integral members of the ISU community.

A New Era for ISU Dining

In his role as chef de cuisine, Wilkins manages and directs the culinary program for the student dining centers, bringing his fine dining expertise to the university setting. Although he has only been with ISU for a year, his impact has been profound. Students and faculty alike have noticed the elevated quality and creativity in the dishes served, thanks to Wilkins’ dedication and passion for culinary excellence.
